Procurement & Preparation

The best chefs carefully choose the freshest ingredients which mainly come from the local area, primarily the nearby Knoblauchsland. Sustainability and cooperation with local producers are central elements in this process. The seasonal availability of products does not only influence creations in the kitchen but is also reflected in the continuously changing menus – offering guests an experience in harmony with the seasons.

The implementation of this philosophy in Restaurant etz was awarded by the Michelin Guide with two stars and a green star. When preparing meat, there is great value laid on using all of the animal - a principle which, for example, award winning chef and passionate hunter Valentin Rottner personally follows in his renowned Restaurant Waidwerk.

Atmosphere & Experience

In Nuremberg’s high-end gastronomy, the focus lies not only on exquisite dishes, but also on the experience surrounding the food. Many restaurants choose show kitchens, which provide insight into food preparation, including the prestigious award-winning restaurant Tisane.

This transparency creates a special atmosphere and encourages direct exchange between cook and guest. Chef René Stein attaches great importance to camaraderie and togetherness. The possibility to experience cooking up close and personal makes dining an unforgettable experience.

In addition to show kitchens, some restaurants offer special events, themed evenings, cooking courses or wine tastings to provide their guests with a one-of-a-kind experience.

Tradition & Innovation

Nuremberg’s culinary identity is deeply rooted in traditional dishes such as the world-famous Nuremberg bratwurst and Nuremberg gingerbread. But the gastronomic landscape of the city offers much more. In the area of haute cuisine, Nuremberg offers a variety of culinary pleasures – traditional dishes remain authentic but are enriched with new impulses. An example is Imperial and Fränk’ness from Alexander Herrmann, where traditional Franconian cuisine meets innovative cooking techniques.

In Nuremberg, classic Franconian dishes are prepared with the utmost care and subtlety. The tradition of Franconian cuisine is perpetuated and cherished and, at the same time, raised to a new level through the expertise and passion of the cook. The first-class quality and unforgettable variety which Nuremberg’s haute cuisine offers makes it an outstanding destination for the fine-dining scene. Try, for example, the Gudzerla (Franconian tapas) in der Wirtschaft, in which Franconian classics receive a modern interpretation.

“Dining Affairs” offers new insights into Nuremberg’s exclusive gastronomy

This year, the Michelin Guide has honored 340 restaurants. Bavaria, with 79 awards, has the most. Nuremberg, with its nine Michelin restaurants and 15 Gault & Millau establishments, now offers guests more stars than ever. Under the motto “Dining Affairs – Culinary Pleasure from Nuremberg’s Kitchens”, the Nuremberg Convention and Tourist Office (CTZ) is offering insights into Nuremberg’s exclusive gastronomy this year.

Hybrid Press Event

Under the motto “Dining Affairs” the Nuremberg Convention and Tourist Office (CTZ) invited media representatives to take a look at Nuremberg’s kitchens on April 15, 2024.

Usually, during an evening in the two-star award-winning kitchen of the restaurant “etz” special menus are prepared. During this event, Yvonne Coulin, the managing director of the CTZ, together with Felix Schneider and Alexander Herrmann, presented the unique nature of the haute cuisine landscape of Nuremberg.
