Recipe: Nuremberg "Winterzipfel"

The Nuremberg specialty "Blaue Zipfel" is well known. Here Michael Höllerzeder presents a new way of preparing the world-famous Nuremberg sausages – one which I’m sure you’ve never heard of. Why not give "Nuremberg Winterzipfel" from Michael Höllerzeder a try!

Ingredients (serves 4):

  • 0.2 l Christkindlesmarkt-Glühwein mulled wine
  • 0.2 l water
  • 0.1 l red wine vinegar
  • 5 pepper corns
  • 5 allspice corns
  • 2 bay leaves
  • 1 whole cloves
  • 5 juniper berries, crushed
  • 1 teaspoon coriander seeds
  • 1 teaspoon mustard seeds
  • 1 tablespoon honey
  • 1 tablespoon sugar
  • 5 finely chopped shallots

Preparation:

Bring all the ingredients to a boil, add 6-8 Nuremberg bratwurst per person and simmer 10 minutes. "An Goudn", as we say in Franconia!
