Why does the asparagus season end on June 24th?

The asparagus season begins in April and ends on June 24th, St. John’s Day. From this point on, the asparagus plant has enough time to grow and create green foliage. There are at least 100 days from June 24th to the first frost. The asparagus plant needs this much time to gather enough strength for the next year’s growth.

What is the difference between white and green asparagus?

In short: White asparagus grows under the ground; green in the sun. Therefore green asparagus creates the materials necessary for photosynthesis – and that makes it green. That’s why green asparagus is healthier, because it contains more fiber and vitamins. The two varieties taste very different. You have to decide yourself which is better.

How should asparagus be stored?

Peeled white asparagus should be eaten the same day or, at latest, the next. Unpeeled asparagus is best removed from its packaging and wrapped in a damp kitchen towel and then stored in the vegetable bin of the refrigerator. It will stay fresh for 4-6 days.
